Virtual Assistant: emails, voicemail, task lists, billing

I am an IT consultant that has been in business for 25 years. I am excellent at providing technology support and web site design for my clients, however I am awful at keeping things organized, doing the mundane daily tasks and keeping myself accountable for the jobs I have in progress. I need someone that is very capable of the following tasks, but also someone that is detail oriented and well organized. I need help in turning my overwhelming mountain into manageable chunks.

1) Tasks lists. I currently have about 60 to 80 tasks that are in various places including my head. The job would start with a phone call to help me get everything into one place that we can both collaborate on. A Google sheet would be best.

I am backed up on emails, text messages, voice-mail, etc. I need someone to go through all of this with me and then continue to do so on a daily basis. (Typically Monday to Friday)

2) Emails and voice-mail. I need someone to daily go through emails and voice-mail and keep track and log. Again adding to a todo list and managing that daily. You would not need to reply to any emails, just help keep track and organize.

3) Phone and client access logs / billing. I need someone that can check my phone logs (this gets emailed daily) and computer access logs (available online) and again organize and log these. It is too often that I talk to a client on the phone and help them without noting billable hours. I have this information logged, but I want to have it consolidated and then compared to phone and access logs to make sure all of my work is getting billed.

4) Scheduling. I want to take my task lists and work them into a daily schedule so that my task lists get done.

5) Help me stay accountable. I need someone that I can share what I accomplished each day so that I can stay on track. Again, as I get tasks accomplished, I want to make sure they are billed for.

I need someone that is english fluent and ok with voice communication when needed. In starting out, I would expect getting organized may take 4 to 6 hours. I would expect once things are on track, it would require 1 to 2 hours a day. I typically receive about 20 emails and 5 to 10 calls per day and typically work on 5 to 20 tasks per day.
